Aamni kozhakatai

A good tea time snack recipe it's my all time favorite recipe ...












Recipe for Aamni kozhakatai :

Ingredient:
For dough
Rice flour -2 cups
Salt to taste
Water to mix
Oil 2 tbs

Tempering:
Oil 1 tbs
Mustard seeds 1 tbs
Urad daal 1 tbs
Curry leaves
Hing
Coconut grated 2 tbs ( optional)
Idly podi 2 tbs or to taste.
Method:

In a bowl take a rice flour salt mix with water as like wheat r rawa dosa consistency must be watery . Che the salt.. In a  pan add oil and pour the flour mixture and mix well for 10 mins or until the mixture form as a thick dough . Not to stick with hand . This is the consistency
Keep aside until to room temperature.  Apply some oil on hands take a small quantity dough in hands and make as a small roundles  and finish all the dough.  In a idly steamer stem the roundles for 15 mins.  Keep aside.  In a pan add oil followed by mustard seeds urad daal curry leaves until fry .. now add the steamed kozhakatai and mix well keep it in medium flame fry until golden brown.  Now add idly powder mix up to the spice ( idly powder recipe already updated). Mix well fried until crispy add some more oil if needed.  

And now Aamni kozhakatai ready to be served with hot cup of Tea/Coffee.

Vegetable Fried rice and kadai paneer


RECIPE FOR KADAI PANEER:

Kadai Paneer Gravy Recipe :-
Ingredients :-
Paneer 250 gram
Chopped onion in chunks (1big size )
Chopped tri colour bell pepper in chunks
(1big size )
Tomato purée(in a blender add 4 mid size tomatoes, 1/2inch ginger, 4pods garlic , 4 green chilly)
3-4Whole red chilly
2 tbsp Whole coriander seeds
2 tbspButter (melted)
1 tsp Cumin seeds
2 Bay leaf
1/2 tsp Peppercorn
4-5 Cloves
1/4 tsp Turmeric powder
1tbsp Red chilly powder ( Kashmiri lal )
1tsp Coriander powder
1/2 tsp Garam masala
Salt to taste
2-3 tbsp Fresh cream ( optional)
Chopped coriander leaves
Method :-
Firstly heat pan & add some Coriander Seeds & whole red chilly .. Dry roast until fragrant .. Let it cool some time .. Then make coarsely powder and keep aside..
Now in the same pan add Butter/ clarified butter ( ghee)
Then add some cumin seeds , pepper corns , cloves & bay leaf after crackling add this coarsely powder & roast for some mins.. Then add tomato purée mixture
Now stir for some time until .. Tomatoes get mushy & cook until the oil separates .. Then add some turmeric powder , red chilly powder , coriander powder & some garam masala ,Salt ... & little water so that masala won't get burnt & it will give good texture to the gravy ...Let it cook for some time Then add some fresh cream ( it's optional) stir for min .. Then add chopped bell pepper & onions pieces stir for 2 min .. Then add little shallow fried Paneer cubes!
Stir for some time... Let it cook for 2 min then turn off heat .. Add some chopped coriander !! 
Thaada!!!! kadai paneer is ready to be served...

RECIPE OF CREAMY PANEER BUTTER MASALA






Whole garam masala,  butter, onion cashews paste tomato puree,ginger garlic paste, paneer cubes capsicum cubes fresh cream




In a pan add butter add whole garam masala shahi jeera


Once fried little. .. add cashew onion paste saute well add ginger garlic paste mix well until raw smell off. ..


                                                         Add tomato puree mix well...



        Add red chilli powder 2 tbs coriander powder 1 tbs cumin powder garam masala powder each                          1/2 tbs tumeric powder salt to taste.  Optional 1/2 tb sugar. Mix well.

                                   And close the lid... After 5 mins chi the taste .. add according to it.


      Mean while fried paneer and capsicum  and keep aside.  U can also add fresh paneer and                     capsicum.
                            Once gravy into thick consistency ... add fresh cream here. ..

Add fried paneer capsicum and frozen peas. .


Mix well.... add dry kasthori methi and mix well. . If the gravy too thick add some water to loosen. ..now the yummy creamy paneer butter masala ready to be served.


Transfer to the serving bowl  add some fresh cream and dry kasthori methi.. and a cube of butter .










Here's u go with yummy creamy fresh home made paneer better masala ready to be served with chapati naan pulka steamed rice. .. I personally like with dosa. ...

Cheesy bread pizza



Bread cheesy pizza.... along with apple juice . 
My mrng breakfast. ..

Brown bread - how many u want.. can use white bread also
Tri color capsicum finely chopped , onion tomato finely chopped. 
Tomato sauce.. Chilli sauce and I add here just for variations thousand island salad dressing. .. 
Oregano, pizza topper available in grocery store. Salt and white pepper.  Grated mozzarella and parmasam cheese. That's all needed. 

Cut down the edges of the bread keep aside. 
In a bowl add quickly pizza sauce by adding tomata Chilli thousand island salad dressing sauce each one tbs.  Put all veggies one by start from onion. Add salt pepper ... oregano ... pizza topper and grated cheese mix well everything together .. here ur stuffing r sauce ready.  Take one bread apply one spoon full of stuffing apply fully covered the bread. If u want can add some more grated cheese on top of it and press with ur hand. Sprinkle some pizza topper on the bread.  

Mean while pre heat oven to 180 for 10 mins.  And place in a tray and bake for 10 mins r until cheese melts and turn to golden brown color.  

Here u go with hot and yummy bread cheesy pizza ready to b served for breakfast even with tea time. Enjoy cooking. ..
