Crispy veg rice cutlets

Rice cutlets…. With chatpata mint coriander chutney…..

Recipe:

Left over rice 1 cup
Boiled and mashed potatoes 2
Grated carrot 1
Chopped spinach 1/2 cup
Shredded cabbage 1/2 cup I used both purple and white
Chopped coriander leaves
Chopped green Chilli 2

Masala:

Red Chilli powder 2 tbs
Coriander powder 1 tbs
Cumin powder garam Masala amchur powder and chat Masala powder each 1/2 tbs.
Black pepper and salt to taste.
Hing 1/4 tbs.
Jeera 1 tbs.
Corn flour and maida for binding
Bread crumbs.
Oil for frying. ….
Method:

In a big bowl put mashed rice and potatoes ( rice must b completely mashed) mix well with potatoes. . Then add one by one veggie. . Mix well first. Then add all the spices … Chk the seasoning adjust according to it. If u want u can add lemon juice here for extra tangyness.
Now add coriander leaves and mix well keep aside for 10 mins. Mean while keep oil in pan for deep frying also can shallow fry too. Take a bowl add maida and corn flour each 1 spoon mix with water for dusting and bread crumbs ready. . Now take one spoon full of that make like a ball and like a tikki. Keep in a plate and dip it in a corn and maida batter and dust it bread crumbs and deep fry in hot oil… make sure before frying the oil is in medium flame to avoid burn. Place it in a paper towel to remove excess oil. . Serve hot with mint and coriander chutney r with tomato ketchup. .. Enjoy with loved ones. do try and let me know frds. ………


Microwave instant dhokla's




Recipe:

Besan flour 1 cup
curd 1 cup
turmeric powder 1/2 tbs
red Chilli powder 1 tbs
salt to taste
sugar 2 tbs
chopped green Chilli 1
oil 1 tbs
Eno 1 sachet
coriander leaves
microwave safe bowl

For tempering:

oil 1 tbs
mustard seeds 2 tbs
white sesame seeds 1 tbs
slit green Chilli 3 to 4
curry leaves 10 to 15 number
coriander leaves chopped
sugar 1 to 2 tbs optional
water 1/2 to 1 cup. 
Hing 1/2 tbs.

Method:
Grease the microwave safe bowl with help of oil or ghee. And keep a side.  In a mixing bowl. . Add besan flour curd salt sugar turmeric powder red Chilli powder oil green Chilli mix well until lumps free .. If u need can extra little water to get a nice consistency like dosa batter.  Add a sachet of Eno (sply fruit and salt) and mix for a minute .. don't over mix.  Immediately transfer the batter into microwave bowl.. pour the batter to 75% of the bowl.. bcos of the Eno it will raise fully. . give a tap.  On microwave high keep for 5 to 6 mins.  

For tempering:
In a pan add oil once hot add mustard seeds once sputter add sesame seeds then add green Chilli curry leaves and coriander leaves add 1 cup of water nix well. Optional if u want can add sugar and mix well ...
between cut the dhokla into cubes and place on a serving plate and with a help of spoon take the tempering mixture to each one of the dhokla and serve hot for breakfast or with hot cup of tea.
