Pasta in red sauce with herbs and spices. 

Ingredients and method: 

Penne pasta 1 cup boiled and keep separate.
Pasta sauce home made or store bought one 1/2 cup. 
Chilli and ketchup each 1 and half spoon. 
Veggies of your choice.  I used red and green bell pepper finely chopped.  Onion 1 medium size finely chopped.  Garlic 3 cloves finely chopped.  
Herbs and spices : oregano ,basil, parsley, Chilli flakes and  paprika powder 1/2 tsp.  All dry powder.  You can also use Italian seasoning instead of above . 
Oil : olive oil 2 spoons. 
Cheese : cheddar cheese ( purely optional).





For homemade pasta sauce 
Ingredients and method

Blanch 3 tomatoes and chopped finely and keep aside.  1 cup of tomato puree  1 medium size of finely  chopped onion . 3 garlic cloves finely chopped.  Finely chopped fresh basil or dried one 1 tsp.  1  1/2 spoon of paprika powder.  Mixed Italian seasoning 1 tsp . Salt. Take a pan add olive oil add garlic saute for few mins add onion saute until translucent add tomato puree and blanched and chopped tomatoes and mix everything well. Now add paprika powder salt and herbs and basil leaves and add some water allow them to boil for 5 to 7 mins.  And here is your pasta sauce is ready.  Store in air tight box for future use.


In a pan add oil once heated add garlic and saute for few minutes add onions and saute well until get translucent.  Add bell peppers and mix well don't over cook it. Need to be crunchy.  Add pasta sauce.  And nix well add salt here according to it.  Add Chilli sauce and ketchup and mix well. Add all the above seasoning and keep some for garnishing.  Mix well.  Now you get the nice aroma from the sauce. Now add boiled pasta and mix well and nicely coated with sauce.  And cook for 5 mins on medium flame.  Add remaining Italian seasoning and sprinkle some grated cheese and Chilli flakes for garnishing.  And transfer to the serving bowl or plate.  Enjoy with your loved ones♡♡♡♡

Schezwan bread cheesy potato sandwich.

Breakfast become dinner.. just bored off with regular foods . Want to have something cheesy, spicy, crispy food. But didn't work anything in mind.
Just done with left over stuff.  Really guys trust me... it's yum and tasty my diner plates finished in a second.

Presenting schezwan bread cheesy potato sandwiches 












Recipe:
Bread slices 6 edges sliced.
Mint chutney
Boiled and mashed potato 2,grated carrot 1, shredded cabbage 2 tbs, finely chopped green chilly and coriander leaves , and any other veggies of your choice.
Salt and pepper to taste.
Chat masala 1/2 tsp.
Grated mozzarella cheese for toppings
Butter for greasing the bread.
Schezwan sauce or tomato Chilli sauce for spread.

Take a bread cut the edges and keep aside. In a bowl add boiled and mashed potatoes along with all the veggies given above.  Add salt and pepper to taste . Add chat masala and mix well with spoon.  Add green Chilli and coriander leaves mix well and keep aside.  Ready with mint chutney and schezwan sauce add little ketchup in ur sauce for the sweet and spicy taste in your bread.

Take a bread apply mint chutney in the bottom layer bread on top of it, Spread potato veggie Masala , on top of sprinkle some grated cheese take one more bread apply schezwan sauce and close it reversely.  Apply melted butter or ghee and toasted it in tawa until crispy and golden brown in color.  You can also bake it for 180 d for 5 to 7 mins.  Preheated for 10 mins.  Nothing much tricky in it.  Just done with leftover mint chutney and schezwan sauce.  Hope you all the recipe of mint chutney and sauce.  If any one required let me know frds.  Enjoy your chatpata schezwan bread cheesy potato sandwich with any home made fresh juices.

Freshly baked Bread Lasagna

Presenting bread lasagna wen I was craving for lasagna those lasagna sheets are not easily available at market. . So what is the best alternative for lasagna sheets is bread. We can use any kind of bread.  But my choice is white bread which gives better taste.  Here's the recipe comes how to make Bread lasagna now.
Ingredients:

All you need is bread slices with edges trim.
White sauce and red sauce it can be a store bought any pizza pasta sauce..
Cheese : I used cheddar cheese in white sauce and cream cheese with spinach filling and mozzarella cheese on top final layers.
Toppings: Chilli flakes, Italian seasoning, oregano and pizza seasoning.  That's all.









Method for spinach fillings.
1 cup finely chopped spinach.
4 garlic finely chopped.
1 grated carrot
Some shredded cabbage
Panner grated
Cream cheese
Salt and pepper to taste.
Butter for saute

In a pan add butter once melts ads chopped garlic saute until light brown add spinach carrot and give a nice mix add cabbage and paneer saute for a minute.  Spinach reduce in size add salt and pepper mix well and off the flame let it cool for sometime.  Once it cools add cream cheese and gently mix and keep it separate.
Now prepare your white sauce :
In a pan add butter 2 tbs maida mix well until sandy consistent add milk and keep stiring until form as a saucy consistency now add cheddar cheese and red Chilli flakes oregano Italian herbs and white pepper no need salt as cheese contain salt in it.  Chk the seasoning add according to it. And your white sauce is ready.  The red sauce I used pizza sauce it's store bought one which I have at home. Now both sauce and spinach veg filling is ready. Only remaining is assembling part.

Now come to arrangements:

Take a lengthwise big casserole or any baking tray which have more capacity to arrange if you doing for more ...
First apply white sauce as a thin layer on top of covered with first layer of bread and spread some red sauce fully to the bread on top.. And now the second layer of bread on top of it the spinach veg filling spread fully and cover with one more bread apply red sauce fully spread and the final layers of bread pour the remaining white sauce fully covered the bread( don't over pouring the sauce use how u need) finally Sprinkle generous amount of grated mozzarella cheese on it. sprinkle some pizza topping here and there to the cheese layers. . Now its ready to Bake in a preheated oven for 10 minutes or till the cheese starts to turn brown and serve immediately.
Preheat the oven for 200 for 10....

And your yummy cheesy bread lasagna is ready to be served.  Serve immediately before the cheese start to thick.

Channa Batura

My all time favorite recipe wen I was a kid my parents take me to hotels first thing my mind to think off me to have this Channa batura also called as chola poori. .
It has been quite long time that I had my favorite dish... suddenly craving for chola poori.. why not can do it at home.  On Saturday night soaked channa. . On Sunday evening my all time favorite Channa batura ready.
Here's my recipe for channa batura.
Ingredients for channa masala
Soaked channa 500g

















Oil 1 to 2 tabs
Jeera 1 tbs
Chopped onion 1 cup
Ginger garlic paste 1 1/2 tbs
Slit green Chilli 2
Finely chopped tomato / puree 3 to 4 medium size.
Turmeric powder 1/4
Cumin powder 1 tbs
Red Chilli powder 2 tbs.
Finely chopped coriander leaves
Channa masala 2 tbs ( I used store bought one if u have ur own masala u can use that)
Finely chopped onion for garnish
Lemon wedges.

Ingredients for batura.
Maida 500g
Suji / rava 50
Salt to taste
Sugar 1 teaspoon
Curd 2 tbs
Water for kneading.


For Batura:
Add maida suji salt sugar mix well add curd give a nice gentle knead add water as needed and gently make a dough and keep aside for 1/2 hour.  Mean time u make chana Masala. .

Method: for channa masala

In a pan add oil add cumin seeds once sputter add chopped onions saute well until golden color add ginger garlic paste mic well until raw smells off now add finely chopped tomato or puree mix well to combine everything.  Now add all above spices given in the list.  Add water to cook
( you can use the channa boiled water also here) close the lid chk the seasoning add according to it. Once Masala cooked ready add boiled channa and mix well with Masala
Should be well coater with Masala add finely chopped coriander leaves add again finely chopped onion for crunchy feeling it should be not too thick / too watery in consistency.  Make according to it.  Transfer to the serving bowl .. garnish with finely chopped onion and coriander leaves with lemon wedges.

Veg dum briyani

Monday morning usually starts to cooks with Monday blues. . Wen it come to think to do for briyani or some spl dish dunno where I get full Josh to do..

Here I'm presenting veg dum briyani for my hubby lunch. . So early na!!! Yes all veggies chopped by yesterday's night itself so morning no tension enjoyed and cooked each and every step

Recipe for briyani: serve for 4 person

Basmati rice 2 cups
Whole garam masala
Oil  / ghee 2 to 3 spoon
Thinly sliced onions
 finely chopped tomato 1
Ginger garlic paste
Green chilli 3
Mixed veggies ( potato cauliflower carrot beans peas and panner) All together 1 big cup
Curd 3/4 cup
Salt to taste
Briyani masala 1 1/2 tsp ( if your not using it need to add garam masala and jeera and coriander powder pepper powder in to it
Turmeric powder 1/4 tsp
Red Chilli powder 1 1/2 tsp.
Pudina and coriander leaves 1 cup
Fried onions for topping.
Safron strands few string soaked in warm milk
Cashew 10 broken into half.

Method:
Soak the basmati rice for 1 hour and keep aside. After one hour boil water add whole garam masala into it.  If u don't like in ur rice. Make a knot in white masklin cloth and drop it in the water .. Once water come to boiling point add ur soaked and drained rice to it.. Cook until
70 % done.  Drained and keep a side. . Allow to cool.
In a pan / sauce pot add oil or ghee.. Once melts add
Shahi jeera once sputter add whole garam masala add thinly sliced onions saute until translucent add ginger garlic paste saute until raw smells off add slit green chilli and pudina coriander leaves mix well . Now add all the veggies mix well also tomato sprinkle some water close the lid cook for 5 to 7 mins. . Once veggies cook soft add all the spices one by one followed  by curd.  Mix well everything combined add salt and chk the seasoning
Close the lid let masala cooks well. . And off the flame.

Layering:
Drop some ghee to the bottom of the pan or in which you going to cook briyani. Firstly  add some gravy.. on top of it rice on top of it saffron milk u can also use kesari color instead with water just sprinkle Some here and there on rice. .. and top of it fried onions and freshly chopped mint and coriander leaves.  Again with veggies and rice and saffron  milk and again fried onions Like wise complete with the left over. Note final layers must be rice.  And close the lid  .

Dum:

Keep tawa on flame .. and keep the pot on it. Close the lid tightly u can either Dum by using kitchen towel and tightly closed with one more vessels which is inverted to the briyani pot. Else we all know with flour dough  closed tightly . Steamed not suppose to go out.  Cook for 20 mins on medium and low flame.  And off the flame.

Here's your yummy hot dum veg briyani ready to be served with onion raita or any choice of ur gravy. .

Stuffed bread gold coins

Yet here's the another tea time snack from my kitchen it's really yummy and tasty snack recipe. . Kids will love for sure. Can be serve with tea ..It can be kids lunch box special too. 

Stuffed bread gold coins♡♡♡

Recipe :

Ingredients:
Bread slices make round with a sharp round edges. 
Butter / clarified ghee
White sesame seeds for garnishing. 

Filling:
Chopped onion 1
Chopped capsicum 1
Frozen corn and peas 1/2 cup
Boiled mashed potatoes 1
Chilli flakes 
Italian seasoning
Salt and pepper to taste. 
Mozzarella grated cheese for topping. 
Tomato or Chilli sauce for base ..








Method.:

Take a bread with the sharp round edges make it round in size apply butter and keep aside.. In a pan add very little oil just to season everything.  Add all the veggies except potato..Mix well .. add all the seasoning and saute in high flame.  Do not have any moisture in mixture off the flame . Let it be little crunchy.  Add mashed potatoes and mix well and make equal balls of bread.  Keep aside.  Pre heat the oven to 180 for 10 mins.  Take one round bread apply sauce on top of it one ball mixture and gently press with your hands on top of apply grated cheesy. . On the the top bread which means the closing bread apply some water not too much just sprinkle it for to stick with the other bread well and press it. Apply some butter to the top bread and sprinkle some sesame seeds  and pizza sraaoning if you want to decorate it... like wise all the bread and bake for 15 mins or until golden brown. 

Enjoy your hot and yummy crunchy stuffed golden bread  ready to be served for snacks , kids tiffen box etc. .

Instant idly sambhar

Instant idly sambhar without daal


Instant idly sambhar that too without daal.
Done in 15 mins. . But no compromise in tastes like hotel sambhar... morning hours we running out of time to do breakfast this is the best and tasty sambhar for idly dosa uttapam venpongal etc...

Here you go with instant idly sambhar recipe

Ingredients required:

Oil 1 tbs
Mustard seeds 1/2 tea spoon
Methi seeds
Hing
Dry red Chilli 2
Curry leaves
Chopped small onion ( sambhar onion) 1 cup
Chopped carrot, yellow pumpkin, brinjal altogether 1 cup
chopped tomatoes 1 to 2
Turmeric powder 1/4 tbs
Red Chilli powder 2 tbs ( I used kashmiri red chilly powder for the color  you can use regular sambhar powder too)
Coconut paste 2 tbs
Besan flour 2 tbs or as per the quantity you used.
Water as required
Salt to taste.
Ghee 2 to 3 tbs
Sugar 1/2 teaspoon (optional)
Coriander leaves finely chopped for garnishing








Method:
In a pan add oil add mustard seeds follow by methi seeds red Chilli curry leaves chopped onions mix well until onion cooks well .. add tomatoes mix well until mushy. . Followed by all veggies one by one saute for few mins.  Add turmeric powder and red Chilli powder and mix well add salt add water to increase the quantity of sambhar allow to boil chk the seasoning. . Once veggies cooked add coconut paste .. now add besan flour mixed up with water and pour into sambhar add sugar if you want here for the mild sweetness. Give one last boil and off the flame. . Transfer to the serving bowl add ghee and coriander leaves for garnishing..

Note :

All together done with 15mins roughly.
If u are making huge in quantity put all the ingredients except coconut paste and besan flour mixture the pressure cooker for 2 whistle .. Once the pressure off add the paste and floor mixture to the sambhar and give one boil .. finally do the tempering.  

Here you go with yummy instant idly sambhar with hot idlies.... Enjoy cooking. ..
